神经氨酸酶

神经氨酸酶也称唾液酸酶（EC 3.2.1.18）。神经氨酸酶负责催化唾液酸与糖蛋白之间糖苷键的水解形成游离的N-乙酰神经氨酸，而游离的N-乙酰神经氨酸在N-乙酰神经氨酸醛缩酶的作用下裂解产生丙酮酸。此酶可与N-乙酰神经氨酸醛缩酶、乳酸脱氢酶、丙酮酸氧化酶一起检测唾液酸的含量。
